2 pkgs (10 oz each) frozen chopped spinach, cooked OR
20 oz bag frozen
spinach - Birdseye - house brand isn't as good
2 cups one-step chicken
flavored stuffing mix (eg, Stove Top)
1 cup grated Parmesan
cheese
6 large eggs, lightly
beaten
1 1/2 sticks (3/4 cup)
butter or marg, at room temp
1/2 tsp salt
freshly ground pepper to
taste
Mix all ingredients in a
large bowl until well blended.
Roll level
tablespoonfuls of the mixture into balls the size of walnuts (you should have
about 60).
Arrange on cookie sheet,
close but not touching.
Freeze until hard, then
pack in a gallon-size freezer storage bag.
TO SERVE:
Heat oven to 350
degrees.
Place frozen spinanch
balls on pan.
Bake 15-20 minutes, or
until hot + firm enough to pick up.
